Manual harvest in boxes of 6-8 kilos
Bunch selection on the table, 100% destemmed.
36 hours of cold maceration at 7 degrees. 18-20 days. Alcoholic fermentation with two to three pumpings per day. Malolactic fermentation in barrels.
Aging: 18 months in 500-litre and 225-litre French oak barrels - 100% new.
