36 hours of cold maceration at 7 degrees. 18-20 days. Alcoholic fermentation with two to three pumpings per day. Malolactic fermentation in barrels.
Aging: 12 months in 65% new 500-liter and 225-liter American oak barrels, 35% second and third use French oak barrels.
